I've been barely eating any fat and not losing weight, why is that?

Not having enough or any essential fatty acids will definitely hinder you're progress. Eating too many of the wrong types of carbohydrates will definitely hinder your progress. Just because something says ôzero fatsö on it does not mean it is not going to make you fat. Any excess calorie you consume from carbohydrate or protein will also be converted into fat by the body. So just because you're not eating that much fat doesn't' mean your body is not converting what you're eating into fat. What you may not know is that you do actually need essential fatty acids to help your metabolism and help your body mobilize fat.
